Water Kefir
*never use metal with your ferments (metal spoons, measuring cups, strainers, you can use metal to boil water in though)
8 cups water (not tap)
½ cup organic cane juice crystals
boil these then completely let the water cool.
Once water is cool then pour in half gallon glass mason jar.
Add in ½ cup water kefir grains.
Cover opening of jar with cloth and a rubber band. Let it sit on counter in a dark corner for 48 hrs.
After 48 hours you will strain kefir grains and measure out ½ cup of grains and start a new batch of sugar water.
With the batch that has already sat for 48 hrs you will get quart mason jars and fill with 1/5 fresh pressed organic juice. Then fill the rest with the kefir water and put mason jar lids on it and let it sit on counter for 2 more days or until lid has pressure. After two days it's ready and place in fridge. Burp it every couple of days (let a little air out by unscrewing top a little)
