Carrie's Organic Whole Wheat Bread
2 cups organic quick oats
2 1/2 cups boiling water
1/2 cup raw honey
1/2 cup organic olive oil
1 tbs sea salt
4 organic eggs
1 cup warm water
2 tbs rapid rise yeast
7-8 cups organic whole wheat flour
Pour boiling water over oats and let stand until it cools to lukewarm. Add honey, salt, eggs and beat 1 minute.
In separate bowl dissolve yeast in 1 cup warm water. Sprinkle with 2 tsp organic sugar. Take a tooth pick and stir around the yeast. (Never use metal with stirring the yeast) let it sit 15 minutes until bubbly and has risen in size.
Pour water/yeast mixture into oatmeal. Add 5 cups of flour and using the dough hook on mixer knead bread for 2 minutes. Add more flour and continue mixing. (Can do this by hand too and knead until all combined). Make into a large ball once combined and place in a glass bowl that is drizzled with olive oil, turn the ball over and then flip back up. Cover with a cloth and let it double in size. Takes about 45 minutes. After it has doubled in size punch down dough knead it 20 times and then let it rise again covered (about 30 minutes) Punch down again and shape into 3 loaves. Place in 3 glass buttered loaf pans. Cover and let it rise again (about 30 minutes). Bake at 350 degrees for 35-40 minutes until top is golden.
