Ingredients:
1/4 cup butter
1 cup chopped yellow onion
1 garlic clove crushed
1 tsp curry powder
1/2 tsp salt
1/4 tsp ground coriander
1/8 tsp crushed red pepper flakes
3 cups chicken broth (or chicken bone broth)
16 oz pumpkin (if you use fresh that has been precooked use 2 cups of puree, and only 2 1/2 cups broth instead of 3, if using organic canned pumpkin use 1 16oz can plus 1/4 of another can and 2 1/2 cups broth)
1 cup half n half (to make your own use 1/2 cup raw milk, 1/2 cup raw cream)
Saute butter and onions until onions caramelize. Add in garlic for a minute. Add all other ingredients up until the red peeper flakes cook 1 minute.
Add chicken broth boil 15-20 minutes uncovered stir in the pumpkin, half n half cook 5 minutes. then using an emersion blender or blender lend until smooth
